White Marble | Mediterranean Grill by Otto Weibel in Orchard
Continuing from the success of its sister restaurant, Black Marble, White Marble is Chef Otto’s latest restaurant at Orchard Rendezvous Hotel with a focus on seafood and vegetables.
Chef Otto conceptualises a menu that recreates classic flavours from Spain, Portugal, France, Morocco and the Middle East for diners. Executive Chef Kenneth Loke brings it to life on the plate, with fresh and quality produce.
For appetisers, we had the chargrilled Octopus ($36++) and Roasted Butternut Squash ($12++). The former features charcoal grilled spanish octopus with garlic cream and crispy potato finished with pistachio and chili oil. The finely shredded potato is light and crisp – easy to finish!The latter is a roasted butternut squash with chili yoghurt (a mix of sriracha and labneh) and coriander salsa finished with chili oil, sunflower seeds and seasonal herbs. If you are there with a group, you might want to consider getting the Mezze Plate ($34++, good for 2 – 3) to share. The mezze plate consists of falafel, tabbouleh with quinoa, fattouche, eggplant moutabal, hummus, chicken skewers and grilled pita. Our favourites from this mezze plate would be the eggplant moutabal and hummus dip, which went well with the pita bread served on the side. An excellent main course is the prawn bucatini puttanesca ($28++) – a classic italian staple. White Marble’s bucatini pasta is boiled till al dente before sautéed with fresh cherry tomatoes, capers, olives, garlic, tiger prawns and anchovies. It is then finished with olive oil and fresh herbs such as chopped parsley and chervil. Another Middle Eastern sharing plate would be the Shish Kebabs. At White Marble, you can choose from seasonal vegetables ($20), seafood ($38), chicken and mushroom ($34), australian lamb ($48) and black Angus beef ($68). These kebabs are served with lemon garlic cream, harissa aioli (yum!) and salbitxada sauces. We highly recommend that you get the curry leaf pilaf rice ($8) as a side. Basmati rice is cooked with curry leaf, sliced lemon, salt and butter. It is finished with curry leaves and toasted pine nuts before serving and is very fragrant.
White Marble is a new option along Orchard Road that you can check out for something unique. It is also a restaurant concept under the umbrella of Far Ocean – a Singapore-based food service provider, which also owns Black Marble SENS Dining and Swiss Butchery.
