Luke’s Lobster x Fat Fuku and Park Bench Deli | A Local Take on Lobster Rolls
Luke’s Goes Local series sees collaborative rolls between the crew at Luke’s Lobster Singapore and local chefs. From December to February 2022, you can look forward to two new local cuisine-inspired iterations of Lobster Rolls by Annette Tan of FatFuku and the sandwich maestros, Park Bench Deli.
The first roll, Sambal Achar Lobster Roll ($30.50) is a lobster roll with Peranakan influences. Created by Annette, we were told that this roll is a reiteration of her childhood habit – lacing sambal belacan and mayonnaise in sandwiches. This roll features chunks (and yes, as you can see from the picture, a rather generous portion) of lobsters tossed in a mild sambal belachan mayo sauce and topped with home-pickled Nonya Achar and a sprinkle of dill for freshness. Not to worry for those who do not take spice, the heat for this roll is minimal and certainly manageable when downed with Luke’s Homemade Lemonade. Do note that the Sambal Achar Lobster Roll is only available from now till 15 January 2022 so you have slightly less than a month to enjoy this beauty.
The second roll, PBD XO Smoked Duck Lobster Roll ($30.50), is a mix of American finesse using condiments that Singaporeans love. Chunks of lobster meat are dressed in a moreish mayonnaise infused homemade XO sauce – a pulverized mix of smoked duck ham, dried shrimp, yellow onions and ginger, what you get when you bite into the roll would be a smoky, umami punch with seafood undertones. We thought this was fragrant and the flavours went well together, but we recommend the Sambal Achar Lobster Roll due to its uniqueness and multi-dimensional flavours. The PBD XO Smoked Duck Lobster Roll will be available for a month from 15 January 2022 to 15 February 2022. We would also recommend ordering the Lobster Bisque ($12.90) to go with the rolls, because why not? Lobster, fresh cream, sweet potatoes and onions are pureed till velvety before adding chunky Maine lobster knuckle and claw meat in. Their lobster bisque is on the lighter and thinner side, so you are likely to handle finishing a portion by yourself without feeling surfeited. These rolls are available at all Luke’s Lobster Singapore outlets (Great World City, Isetan Scotts and Jewel Changi Airport).
