Does Chef X sound uncannily familiar?  You probably have heard of Baker X – an initiative by Far East Organisation for home-based bakers to operate a cafe at Orchard Central.  This time, Far East is launching Chef X so home-based and private dining chefs can have a chance to operate their own full-fledged commercial restaurant within Clarke Quay Central.  Each resident chef will be there for about four to eight weeks to showcase their culinary skills at a space on Level 3 with a dining area that can accommodate up to 24 diners.  

We had the opportunity to preview a few of the upcoming resident chefs and had a wonderful experience interacting with these home-based chefs, one of which we ordered from previously. 

Chef X 1
The 1st resident is Chef Sydnee Loue of Royaleys Smoky Boat (@royaleys.smokyboat) serving up Smoky Boat Rice from 26 April to 21 June 2024.

These banana leaf parcels are stuffed with premium quality rice topped with a range of ingredients – chicken, fish, prawn or soybean – naturally seasoned with tempered spice pastes.

The parcels are grilled for a smoky flavour and are served as individual portions or colourful sharing platters, accompanied by fresh vegetables and side dishes.

From 1 July to 26 August 2024, Chef Wanting (@wantingkimchi) will be the resident chef, serving up fermented food.  Her best-sellers include her signature Cabbage Kimchi, Addictive Apple Kimchi and wild fermented lemonade.  At Chef X, she will also serve up a selection of hot food, lunch bento style.

We tried a few of her kimchi / side dishes and what stood out to us was the braised kimchi – very flavourful and MSG-free!

From 5 September to 30 October 2024, Chef Jasmine Foo of @ilovepoposkitchen will be taking charge.  Popo’s Kitchen offers wholesome and comforting flavours reminiscent of the food found in one’s grandmother’s kitchen – hence the name.  The three-year old home-based business specialises in handcrafted soon kueh and roast chicken platter and will be expanding its offerings during its Chef X residency.

Their soon kueh has a soft crystal skin with generous fillings within, and the signature soon kueh is my favourite.

You can keep a lookout for the Blue-Pea yam png kueh too, and their mala soon kueh that spice lovers will find delight in.

Chef Ben of @ooomahmee will be in resident from 16 December 2024 to 10 February 2025.  We have ordered from @ooomahmee before so it was nice to be able to meet Chef Ben in person and to have his food fresh!  This was a yummy bowl of bars chirashi – with bits of salmon, swordfish, tamago and octopus with some soy sauce.

We also had this comforting umami mushroom soup that was delicious!  We are looking forward to trying more offerings from @ooomahmee, particularly hot food given the physical space.
