1. La Mer
A 3 Michelin star winning Chef Emmanuel Renaut is the executive chef of the high end French Bistro located at the atrium. He was voted “Chef of the Year” by his Michelin starred peers. Chef Renaut has created a new French food menu with a modern twist for a unique fine dining experience. The restaurant will also offer casual, complimentary French style breakfasts and lunches.
The appetiser started off with escargots and wild mushrooms, black garlic custard bathed in a herbal broth. The chewy escargots took the taste of the broth was cooked in, giving a garlicky and butter taste.
Besides the beautiful presentation shown in the picture above, something irresistible about this meat pie was the minced meat stuffed in a crunchy short bread crust, onion-blueberry mousseline.
The bread slice is soaked in the goodness of scorpion fish and lobster mousseline, giving a very rich and unique flavour. While the light crust that shatters when you slice it. It gives a variety of textures and flavours; something soft, something crunchy and something savoury and something sweet.
The roasted pork tenderloin’s mild flavour partners well with savoury rich jus, coffee sabayon, mushroom tart and roasted potato. And the tender texture of the roasted pork tenderloin is a big factor for the success of this dish.
The aroma is slightly hoppy, with strong citrus notes, sweet short dough and end with slight nuttiness from the hazelnut.
This dessert is the perfect ending after dinner. It’s a chartreuse liquor scented cream with dessert-like chocolate flavour. It simply melts in the mouth and makes a refreshing indulgence.
2. The Piazza Atrium
The breathtaking Piazza Atrium, serves as the central hub of the ship with a grand piano displaying elegance and style. Elegant twin staircases spanning the different levels that you don’t mind going up and down the gorgeous stairs.
