Earlier this month, Bedrock unveiled its newest open wood-fired grill concept, Fireplace by Bedrock at you guessed it – the newest mall buzzing with activities – One Holland Village.  As an extension of the Bedrock brand, Fireplace inherits the DNA of the popular steakhouse and centers on open fire-grilling. 

Guests can also look forward to an experience beyond taste – a gallery of meat, seafood and other ingredients are displayed behind glass doors just as they step through the entrance.  Within the main dining room, the open-kitchen is in plain view so everyone can have a good look at the chefs diligently working at the open wood-fire grill.  The smokiness also wafts through the air.

After we settled in, we started our meal with a Watermelon Feta Salad – a starter available from the Set Lunch Menu, which is very reasonably priced.  Set Lunches start from $32 for two-courses and this salad is very refreshing, slightly sweet, slightly salty, slightly sour and slightly spicy.  We were later told that the salad is tossed in a coriander lime dressing that is made from a mixture of lime juice, mustard, coriander, honey, salt and pepper.

The other option on the Set Lunch Menu is the Octopus Tentacles.  A juicy tentacle that is well-grilled and served with a housemate coriander pesto sauce and sprinkled with Togarashi (a Japanese 7-spice blend).

The bone marrow toast ($28) is a must-order at Fireplace, regardless of whether you are there for lunch or dinner.  The beef bone marrow is mixed well with pickled shallots, capers, parsley and caramelised onions and piled atop house-made toasted brioche.  So satisfying.

For those who love their veggies, don’t miss out on the avocado ($12) that has been lightly grilled on the applewood-fire grill and topped with roasted corn kernels and diced tomatoes and drizzled with a ponzu dressing.

A surprising side that gained praise around the table was the Coal-Roasted Sweet Potatoes ($10).  Such a simple dish but it is well-seasoned with salt and blended fennel seeds after being roasted on the applewood-fire grill.

Onto the meats, which are the highlights of Fireplace, the grilled Lamb Ribs ($48 / 300g) are definitely for those who love big flavours.  It is seasoned with a house-blend rub of paprika, black pepper and chilli powder.  I do not take much lamb but those who did thought that it was done well.

The Dirty Duck ($48) was my preferred meat because of how tender it was and how unique the sauce was.  Irish duck is rubbed with a medley of aromatic spices (think coriander powder, Sichuan peppercorn, cumin powder), sous vide then finished on the grill upon order to retain the juiciness.  The plums served at the side helps to cut through the richness too.

To round up the meal, I highly recommend the Lemon Pound Cake ($13).  It is incredibly fragrant and we could smell it before it reached our table.  We later learnt that it is because after the lemon pound cake has been baked in the over, it is brushed with melted butter on both sides then lightly grilled on applewood-fire.  The mixed berries compote adds to the complexity – thumbs up from me!

Alternatively, if you want something boozy, go for the Grilled Spice Rum Pineapple ($14).  Pineapple is soaked in rum then hung over the applewood-fire grill for 2 to 3 hours.  It is also served with rum and raisin ice-cream so there is no doubt about the booziness.  

Fireplace was buzzing with activity during our visit.  We saw couples on date nights, families out for a feast and friends coming together for a meal.  Apart from the main dining room with floor-to-ceiling windows, there is an outdoor terrace for al fresco dining.  

We hear that ShopFarEast members get to enjoy 1-for-1 mains till 31 December 2023 (a complimentary Mac n Cheese upon an order of a dish from the “Taste” or “Harvest” sections.
