Media Tasting at Level33
After 6 weeks of extensive revamp, LeVeL33 is finally open with a bigger and better menu than before!
LeVeL33 is a well-integrated space that caters to all your guests’ needs – LeVel33 Social if you’re with family and friends for something casual; LeVeL33 Dining Room for those who prefer a more intimate and exquisite dining experience; and the Terrace for everyone to share conversations over a pint of beer with the Singapore skyline as a spectacular backdrop.
Not only is the space designed around an actual working brewery, Executive Chef ArChan’s new menu has creatively woven beer elements into most of her dishes. Taking inspiration from the beer brewing processes, she has also begun pickling and fermenting vegetables with spent grain (filtered by-product after barley malt has gone through the first process of turning into beer) and dry-aging her own meats.
If it’s your first time at LeVeL33, start off with the beer tasting paddle (five 100ml tasters of LeVeL33 craft brews) – Blond Lager, India Pale Ale, Seasonal Beer (currently, Golden Ale), Wheat Beer and Stout. All the beers are brewed on-site by their resident brew-master, making them the world’s highest urban microbrewery.
LeVeL33 Social now hosts a live oyster station. Oysters are displayed in all their glistening glory and if you head there during lunch, this counter showcases salad greens, charcuterie and fresh bread buffet-style. This is also the best seats in the house, for those who enjoy seeing the chefs preparing your food.
We tried 2 different kinds of oysters – Canadian and Irish. It is recommended to start with the former, which is more plump and juicy with a fresh taste whilst the latter is more mineral and briny. Top off your freshly shucked oysters with a squeeze of lemon juice and a dash of housemade malt vinegar.
Other raw dishes such as the Hokkaido Scallops and Hiramasa Kingfish were outstanding. The scallops were incredibly fresh and the yuzu pickled fennel, soy and ginger made it a refreshing dish. The kingfish was lager cured and topped off with salmon roe and chilli padi, reminiscent of thai flavours.
Having whet your appetite with these snacks, the grilled dishes does not disappoint. The Asparagus was perfectly grilled, served with creamy burrata, kombu and malt oil. The Octopus was served with fennel escabeche and saffron aioli. The highlight of ordering any grilled item would be to pair it with the unique spent grain mantous that are freshly fried upon each order. (Tip: Mop up the saffron aioli and add some burrata to the mantous and you will definitely want to add on mantous!)
The large plates lived up to our expectations that were built-up from the previous dishes. In particular, the Pan-Seared Local Sea Bass was very well-received. The fish is served with beer malt risotto, which gives this dish a nutty flavour. The Iberico Pork Jowl served with fermented leek was very tender – must order for meal-lovers!
Our vegetarian friends are also well-taken care of. The Veggie Burger was an unexpected surprise for the night. A hearty juicy housemade patty made of mushroom, sweet potato, spent grain, sweet paprika and corn amongst other ingredients Is sandwiched between caramalised onions and fresh puffed malt brioche. Another option would be the Spent Grain Linguine tossed in seaweed butter and parmesan and served with generous amounts of truffle.
The desserts (yes, you read that right!) are also infused with beer brewing elements. Chocolate lovers will definitely enjoy the Spent Grain Chocolate Tart which incorporates spent grain into the tart shell and filled with stout ganache which tempers the sweetness of the chocolate with a slight roasty and malty flavour.
What makes this platter of petit fours interesting is the echoing of the 5-beer tasting paddle mentioned earlier, so you end of the meal with the same house-brewed flavours!
Overall, we felt that much thought has been given to LeVeL33’s current menu and well-executed. At the end of the meal, we were already making plans for our return visit, so head down for your own beer-tiful experience.
