Enjoy every mouthful of smooth consistency cauliflower mousse topped with steam abalone and bafun uni from hokkaido aside dripped with chive oil. The combination of different texture of crunchy abalone, sweetness of bafun uni and soft cauliflower mousse brings you to the moon and back.

Chef-made focaccia bread with a light brown crust, airy soft center, and served with a side of echire butter.

Flaky, fatty and slightly grilled tuna (chutoro), served with a side of refreshing braised winter melon, Jerusalem artichoke purée and soft tomato purée. A little smoky flavour can take this dish to another level. While the accompanied purée complements and does not take away from the natural flavour and texture of chutoro.

Rare French pigeon is slightly richer in flavour marinated in Japanese miso with port wine sauce. Alongside with a savoury touch of black garlic purée and miso powder. They’re so tender and easy to slice through. Rest assured, the gamey taste is kept to a minimum.

Perfect crisp skin, while the white meat remains juicy and tender. Sautéed golden eyes snapper (shizuoka) is served alongside with very sweet pumpkin and French mussels purée which paired nicely with the white meat.

As we are coming to the end of the meal, chef has also prepared a special made whole grain flour noodles served on a pool of light and comforting soup made with duck and chicken bone.

A sweet finale with a dessert comprises of panna cotta, slices of mango and not forgetting chef-made vanilla ice cream topped with white wine granita. The milk and cream in the panna cotta are infused with Taiwanese high mountain tea leaves. You will be able to taste the perfumey aroma of tea and is incredibly light on the palate when you take a bite of this.
