One-Ninety Restaurant takes a fresh shade with its indoor botanical setting inspired by the heritage-botanical of the newly renovated Four Seasons Hotel’s rooms and suites. Embrace fresh, seasonal and daily-sourced produce in the One-Ninety menu with an Asian twist on wholesome Provençal cuisine.

Chef Kamarl John who heads One-Ninety Restaurant in Four Seasons Hotel Singapore believes in using quality ingredients with clean fresh flavours when it comes to food. An experience where the diner leaves happy after a natural and wholesome meal. His culinary background includes Adrift by Michelin by celebrity Chef David Myers and Four Seasons London at Ten Trinity Square.


Kickstart your meal with comfort Artisan Sourdough with Seaweed Butter. Trust that it’s so soft and fluffy! Each loaf is baked fresh daily with its flour sourced from artisanal mills in Hokkaido Japan and produced upon each order.

Attention to detail is evident from the start with perfectly prepared Chef Kamarl’s signature Seasonal Seafood Tower boasting the fresh seafood in perfect fog dreamy effect. Selection of fine seafood from Southeast Asia, Japan & North Atlantic Ocean in Europe. Tucking into scrumptious seafood including responsibly farmed Maine Lobster, King Crab, Mussels, Spanner Crab, Hokkaido Scallops, Prawns, Tuna. If you love seafood then you have to try their house-made sauces like Calamansi Aioli and Young Ginger Vinaigrette that would perk your appetite!

Creamy and buttery avocado salad with mixed baby cresses in a miso dressing. The brown rice poppings added crispiness to it and I can just sit there and munch away this healthy salad.

A mixture of lobster and prawn fillings with extra texture and flavour in the puff! The tobiko sauce is rich and refreshing with a spicy kick. While the finely chopped wagyu beef is seasoned with dijon emulsion and dressed with a generous scoop of caviar.

A medley of seafood including traditional Provençal fish of market-fresh roasted Red Snapper, Clams, Tiger Prawns and Bouchot Mussels in the goodness of a rich, spicy garlicky yet delicate broth of potatoes, ripe tomatoes and accompanied by herbs and spices aromatics.

This 1.2kg forty days aged Wagyu Rib Chop will make a perfect shared meal for four generously. It is first aged in-house for 40 days, tenderized and slow chargrilled over apple wood. Tender wagyu with a nice smoky crust tasted as good on its own. Or alternatively, dip into the peppercorn sauce and make a flavoursome eating experience.

We are looking at Iberico Pork Presa with marbling of fats mingling in the red meat of that pork. And yes, they’re pork, not beef. The Iberican Pork is known as the “Wagyu of Pork” with a high concentration of healthy oleic acids. I have to admit that the texture of Iberico Pork tasted similar to having wagyu beef. Extremely tender and juicy with the oily feel in every bite. It is accompanied with sweet and sour pineapple chutney spiced with star anise and celeriac purée.

This is a dessert table and cake table and cheese table all rolled into one. The handmade cakes desserts are crafted by pâtissier Audrey Yee, a Four Seasons veteran and a graduate of the renowned Le Cordon Bleu School in London. The spread is on a rotating basis based on the freshest and finest seasonal produce of the day. Some of the dessert featured are Strawberry Gateau with Almonds, Fruit Tartlett, Napoleon, Dadar.
