HighHouse has always been about more than just food, it’s about creating connections, experiences, and conversations around the table. That ethos comes to life in The High Table, a concept that brings in renowned chefs to collaborate and experiment with Pan-Asian cuisine. Each guest chef brings their own story, background, and flavor philosophy, resulting in a menu that feels both daring and deeply thoughtful.

From now until 15 June, MICHELIN-starred Chef Daniele Sperindio is lending his Italian roots to HighHouse’s Pan-Asian canvas. Naturally, we had to see (and taste) it for ourselves and I’m happy to say, it more than lived up to the hype!

First off, the space is stunning. Perched on the 62nd floor, HighHouse is drenched in natural light, with floor-to-ceiling windows that offer a panoramic view of the Singapore skyline. It’s the kind of place that feels like a special occasion, even on a regular weekday.

We opted for the 3-course set lunch ($58 per set, before any add-ons), and I really appreciated the flexibility of the menu: you can go with two starters and a main, or a starter, main, and dessert. I have a bit of a sweet tooth, so I went with the latter. My partner, ever the savoury fan, chose two starters and a main.

I started with Summer in Seoul, a chilled somen noodle dish with aged watermelon, geranium leaf, and a delicate tomato broth. It was light, elegant, and incredibly refreshing – an ideal opener that gently wakes up the palate.

My partner went with two hot starters: the Panino al Sugo… Fritto (+$10) and the Grilled Indonesian Squid. The panino was hands-down the standout starter of the day. Think fried flatbread layered with XO sauce, burrata, porcini ketchup, and pepper “crusco”, it had the feel of a crispy, umami-packed pizza, but with layers of flavor that kept you guessing.

The grilled squid, served with a cowhorn pepper sauce and sweet-sour pineapple salsa, was also beautifully done, with a surprising bonus: crispy fish skin that added a perfect crunch.

For mains, I chose the Spanish Octopus Reginette Pasta (+$8). It came with a lobster bisque reduction, kimchi, and furikake – classic Italian comfort with a clear Asian twist. It was rich, savory, and full of character.

But I’ll admit, my partner’s Slow-Roasted Australian Wagyu Beef Cheek (+$12) stole the show. The wagyu had been cooked for six hours and practically melted in the mouth. It was served with a red wine jus and a scallion-garlic XO sauce, plus a side of begedil with sambal for that spicy, Southeast Asian kick. Even as a die-hard pasta fan, I had to concede defeat.  This was the main of the day.

To finish, I had the Coconut & Cashew Tart, and I’d come back just for that alone. The almond cream, sea salt cashew mousseline, and barley tea ice cream came together in a dessert that was rich without being cloying, and full of contrast in both texture and flavor. A sweet ending done right.
Pro tip: Request a window seat when making your reservation – the view is worth it!
