Fiata, recently crowned #3 on the 50 Top Pizza Asia-Pacific 2025 list and named Best Pizza in Hong Kong, is making its highly anticipated debut in Singapore with a limited-time pop-up at ANTO. Helmed by acclaimed Chef Salvatore Fiata (Sasà), this beloved Neapolitan-style pizzeria is known for its precise execution, quality ingredients, and soul-satisfying flavors.

For this special collaboration, Fiata joins forces with Master Pizzaiolo Antonio Brancato of ANTO – Singapore’s highest-ranked pizzeria at #13 on the same prestigious list. ANTO also holds the distinction of being the only pizzeria in Singapore awarded a ‘Golden Ticket’ to the upcoming 50 Top Pizza World Awards in Naples, where it will compete on the global stage alongside Fiata. With both establishments pushing the boundaries of contemporary pizza, expectations were high.

Fiata x ANTO Pop-Up 01
We began our meal with two starters: the calamari and the burrata. The calamari was well-executed – crispy and tender – but ultimately leaned on the familiar side, lacking a distinctive element to make it stand out.

The burrata, on the other hand, made a stronger impression. Creamy and fresh, it was paired beautifully with a trio of tomatoes – each offering a different texture and level of sweetness and finished with basil pearlage, which added a delicate burst of herbaceous flavor.

A simple yet elevated dish that set a promising tone for what was to come.

Moving on to the mains aka pizas, we started with Fiata’s Pizza of the Year 2024, the Provola e Pepe. Featuring provola affumicata, San Marzano DOP tomatoes, cracked black pepper, fresh basil, and a drizzle of extra virgin olive oil, this pie is a masterclass in simplicity and balance.

Smoky, bright, and aromatic, each bite reminds you that less is more when ingredients speak for themselves.

Next was the Bronte 5.0, a standout from ANTO. This creative and indulgent combination layers fior di latte from Naples, mortadella, lemon zest, semi-dried tomatoes, fresh ricotta, and Sicilian pistachios.
Fiata x ANTO Pop-Up 07
It’s rich yet nuanced, with the pistachio and lemon lifting the savory mortadella and cheese into something truly special. An excellent example of how modern pizza can be both playful and refined.

To round off the experience, we sampled one of ANTO’s signature Negronis—specifically the Pizza Negroni, a quirky yet satisfying cocktail that somehow echoes the bold, savory flavors of a great pizza. It’s inventive, slightly smoky, and worth trying if you’re feeling adventurous.

The pop-up is only till 2 May 2025 so snag your seats if you want to try the pizzas from Fiata without flying to Hong Kong.

Budget: $30 – $45 per person
