Media Tasting at MAI by Dashi Master Marusaya
MAI by Dashi Master Marusaya is located along Bukit Pason Road, a latest dining concept launched by Marusaya, an established wholesaler of Japanese katsuoboshi (dried bonito flakes).
As the name suggests, this restaurant is specialised in dishes prepared from their signature katsuoboshi, from hotpot to hot plate to claypot.
The dashi used at MAI is much more intense and concentrated in flavor since its katsuoboshi is dried and fermented over 2 years instead of the usual 1 year. The aged bonito is then cooked for over an hour with Rishiri kelp that is specially imported from Japan. It results in the all natural umami flavors without any MSG or artificial flavoring involved.
Lunches at MAI are pretty affordable as each sets include a variety of sides. Umami packed chawanmushi, miso soup with several toppings, bonito flakes as well as claypot rice cooked with dashi.
Enjoy the Shabu-shabu such as the US Black Angus Beef and Hokkaido Pork Loin which are accompanied by fresh vegetables and house dips. I preferred having the meat without sauce since I felt they were flavorful enough on their own.
Those would love the sizzling hotplate could go for either the A4 Japanese Wagyu Beef Toban Taki Set or the Prawn, Scallops & Oyster Toban Yaki Set. All the ingredients were really fresh and to sure was an enjoyment to bite into the tender beef slices.
Another dish which I really love would be the Bonito Stock Flavor Deep Fried Chicken. A perfect compliment with sake or as an appetiser alone. MAI by Dashi Master Marusaya menu also showcased many other tasty dishes that uses dashi for that umami-ness.
