Caffe B MBS is a dining and bar concept that weds Italian and Japanese culinary traditions. It is conveniently located at Marina Bay Sands, near the Convention Centre of The Shoppes. Caffe B MBS purvey contemporary Italian food with a Japanese touch in a relaxed and spacious setting, alongside fine Italian and unique Japanese wines. An unpretentious outdoor bar showcasing novel and signature Japanese-enlivened cocktails lies directly above the restaurant. It is set against the luxury and magnificent views of Singapore’s cityscape.

Smoked Salmon and Tomato Salsa served in a homemade crispy yellow corn meal shell. Delectable filled marinated salmon in very mild spicy tomato salsa, accompanied with a drizzle of dill mayonnaise and an appeasing blend of herbs. If you like very flavourful smoked salmon, you’ll love this.
Craving for festive top pick dishes with the hearty Roasted Young Tom Turkey Breast and Roasted Striploin of Beef. I personally love the taste of gingerly slow-roasted striploin beef cooked in medium. Palatable beef texture in toasty flavours. And to my pleasant surprise that Turkey Breast remains tender. Option to dress in cranberry and veal juice. This dish is also served with a side of brussel sprouts, caramelised pineapple rings, very delicious parmesan grilled tomato, chateau potatoes, tasty buttered chestnuts and baby young corn. Something to note that chateau potato is a hard bite.
Sweeten the 3-course meal with a sinfully Vanilla Gelato Casatta that worth every calories. This hazelnut sponge cake is generously layered with lip smacking Vanilla Gelato and infused Brandy. Synonymous with the joyous Christmas season, this dessert is topped with a candied Italian meringue and garnished with wild berries and raspberry coulis, adding to your daily dose of antioxidants.

Moving forward with Caffe B MBS Christmas Restaurant Six-Course Menu. Kick start with French classics inspired quintessential antipasto, Duck Liver Terrine Crocrante. Duck Liver is prepared with crispy bread towards buttery texture and rich in the taste while retaining its organic flavours. Beautifully plated with assortment of charbroiled yellow watermelon, choya jelly and pea tendril for the extra crunch and perfect with a layer of green apple chutney.
Warm your palette with Chef’s Fresh Pot of the Day; Cauliflower soup. Light taste, thick and smooth bowl of soup. Do note that this dish may differ on your actual visit as it changes daily.
Risotto is comforting and made elegant with risotto sushi wrapped with sakura from Japan and plated with sauteed onions and a pinch of sakura mirin and shaved bonito. The final texture is soft, yet has a slight chew at the center of each grain. It is prepared with shallots, parmesan cheese and olive oil.
Up next with poached lemon sole and true cream. Energized with layers of pan fried Juliennes of green zucchini and Carrots on top of a smooth white true cream foam. Advance your palete with some sliced black truffles. I personally feel that there’s rooms for improvements in lemon sole texture and black truffles fragrance.
Pair this with a glass of Ciampagnis Vieris Chardonnay Friuli Isonzo 2013.
Meaty and succulent flavor by the Duo of Lamb Loin, comprising a sumptuous pair of lamb loins prepared in two styles. The first piece is prepared in Marinated Herbs and Mustard roasted on a skewer. Whereas the second is pan-seared and lightly seasoned with fried sesame. Freshened with a fresh layered tomato with a blend of cheese and herbs -Ricotta, Parmesan, Basil and a Sprig of Thyme.
Sip into a glass of Il Pollenza Magnum 2005.
Dessert makes the best part at the finale. The White Forest Verrine Style is layered with sour cherry compote and mascarpone con matcha chantilly. Garnished with some matcha soil and a complimenting aroma of raspberry. This dessert has a well balance of sweetness and 1 scoop is never enough! Don’t you find it resembles a mini Christmas tree in a glass?
Perfect with a glass of Ben Rye Passito di Pantelleria DOP 2013, reminiscing of fresh apricots and candied orange peel for an exquisite finish to your meal.

I was blown away by the fine details eg. presentation in the dishes. However, the taste may differ for some. I personally love the two desserts and dessert wine pairing for Christmas bar and restaurant menu best. As this was an invited tasting and I was served by the restaurant manager. I do spot services at other tables and reception as well. There are occasions whereby customers are waiting at the reception for more than 10 minutes and the staffs were unaware as none was stationed at the reception. Plain water was not added automatically and have to be prompt repeatedly. This happens to me as well. However the ambience is good with spacious seats and walkway.
